Ingredients
For Bread
2 1/2 tsp active dry yeast
1 tbsp sugar
1 tbsp greek yogurt or sour cream
1 cup whole or regular milk
3 cups bread flour
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1 egg
3 tbsp butter
For Cinnamon Sugar Filling
1/2 cup butter, melted
1/4 cup sugar
3/4 cup brown sugar
2 tsp cinnamon
1/2 tsp nutmeg
For Icing
1 1/2 cup icing sugar
1 tbsp butter, room temp
1 1/2 tsp vanilla
3 tbsp milk
Directions
Make Dough
In a large cup, pour the warm milk and stir in the yeast, sugar, and Greek yogurt. Mix well and let the yeast activate for about 10 minutes until frothy.
In the bowl of a stand mixer, combine the flour, salt, cinnamon, and nutmeg, and mix until evenly distributed. Add the activated yeast mixture and the egg to the dry ingredients, mixing on low speed until incorporated.
Gradually increase the mixer speed to low-medium and knead the dough while adding the butter, a little at a time. Continue kneading for about 10 minutes until the dough is smooth and elastic.
Transfer the dough to a warm, draft-free spot and let it rise for 45 minutes to 1 hour, or until it has doubled in size.
Create Cinnamon Sugar Filling
While the dough is rising, in a medium sized bowl combine white sugar, brown sugar, cinnamon and nutmeg and set aside.
Prepare a bread tin, lining the bottom with parchment paper and lightly greasing. Set aside.
Roll and Layer
Once dough is done rising, roll dough out to about ¼ inch thickness on a lightly floured surface. Cut it into 2- to 3-inch squares.
Dip each square into melted butter, then coat it generously with the cinnamon sugar mixture. Arrange the coated squares upright in prepared bread tin.
Cover with plastic wrap and let the dough rise again in a warm place for 30 to 45 minutes, until the loaf has puffed up.
Bake to Perfection
Preheat the oven to 350°F (175°C).
Lightly butter a piece of tin foil covering the bread lightly and bake it for approximately 40 minutes.
While bread is baking make icing: combine sugar, vanilla, butter and milk until silky and smooth. Set aside.
Drizzle with Glaze
Once baked, let the bread cool completely before carefully removing it from the tin.
Drizzle the icing over the cooled bread, allowing it to cascade into the crevices. Slice, serve, and enjoy this decadent pull-apart bread!
